Ingredients

  • 1 pound ground beef
  • ½ pound ground pork
  • 1 small onion, finely chopped
  • 1 cup breadcrumbs
  • ½ cup milk
  • 1 large egg
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 2 cups mashed potatoes
  • 1 cup shredded cheddar cheese
  • ½ cup cooked and crumbled bacon
  • ¼ cup chopped green onions (optional, for garnish)

Instructions

  1. Preheat the Oven: Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish with cooking spray or butter.
  2. Prepare the Meatloaf Base:
    • In a large bowl, combine the ground beef, ground pork, chopped onion, breadcrumbs, milk, egg, Worcestershire sauce, salt, black pepper, and garlic powder.
    • Mix until just combined, being careful not to overmix to keep the meatloaf tender.
  3. Bake the Meatloaf Layer: Press the meat mixture evenly into the prepared baking dish. Bake for 25–30 minutes, or until the meatloaf is fully cooked.
  4. Add the Mashed Potatoes: Spread the mashed potatoes evenly over the cooked meatloaf layer.
  5. Top with Cheese and Bacon: Sprinkle the shredded cheddar cheese and crumbled bacon over the mashed potatoes.
  6. Finish Baking: Return the casserole to the oven and bake for an additional 10–15 minutes, or until the cheese is melted and bubbly.
  7. Garnish and Serve: Remove from the oven, let it rest for a few minutes, and garnish with chopped green onions if desired. Slice and serve hot.
