Description

These Orange Creamsicle Mini Cheesecakes are the perfect bite-sized desserts that combine the nostalgic flavor of creamy orange creamsicles with the rich, velvety texture of cheesecake. They’re easy to make, no-bake, and stunningly beautiful with their vibrant orange swirls. Perfect for parties, summer gatherings, or anytime you need a citrusy pick-me-up!

Ingredients

For the crust:

  • 12 Oreo cookies

For the cheesecake filling:

  • 16 ounces cream cheese, softened to room temperature
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • Zest of 1 orange
  • ½ teaspoon orange extract
  • 23 drops orange gel food coloring

For garnish (optional):

  • Whipped cream
  • Orange slices

Instructions

  1. Line a muffin tin with 12 cupcake liners. Place one Oreo cookie at the bottom of each liner to serve as the crust. Set aside.
  2. In a medium bowl, beat the cream cheese and powdered sugar together until smooth and creamy.
  3. In a separate bowl, whip the heavy cream until soft peaks form. Add the orange extract and continue whipping until stiff peaks form.
  4. Gently fold the whipped cream into the cream cheese mixture. Mix on low speed until just combined.
  5. Divide the cheesecake mixture evenly into two bowls.
    • In the first bowl, leave the mixture plain.
    • In the second bowl, add the orange zest and orange gel food coloring. Mix gently until fully combined.
  6. Spoon the plain cheesecake mixture over the Oreo crust in each liner, spreading it evenly.
  7. Add the orange cheesecake mixture on top, spreading gently to form a second layer.
  8. Use a toothpick to swirl the layers lightly for a marbled effect.
  9. Refrigerate the cheesecakes for at least 3–4 hours, or until fully set.
  10. Once set, remove from the liners and garnish with whipped cream and orange slices, if desired. Serve chilled and enjoy!

Notes

  • For best results, allow the cheesecakes to chill overnight.
  • Adjust the amount of orange gel food coloring to achieve your desired shade of orange.
  • You can substitute Oreo cookies with graham crackers or vanilla wafers for the crust
