- 3 tablespoons olive oil or avocado oil (divided)
- 1 small yellow onion, diced
- 20 oz frozen or refrigerated hash browns
- 1½ teaspoons sea salt (divided)
- ½ teaspoon black pepper
For the Casserole:
- 1 cup dairy-free cheddar-style shreds (e.g., Violife)
- 5 large eggs
- ¾ cup dairy-free milk of your choice
Optional Garnish:
- Scallions or fresh chives
Instructions
- Prep the Ingredients:
- Partially thaw the chicken sausage for easier slicing. Cut into bite-sized pieces. Preheat your oven to 375°F and spray a 9×13-inch casserole dish with cooking spray.
- Cook the Chicken Sausage:
- Heat a large skillet over medium-high heat and add 1 tablespoon of oil.
- Add the chicken sausage pieces and cook for about 5 minutes, stirring occasionally, until golden brown. Remove the sausage from the skillet and set aside.
- Prepare the Hash Browns and Onions:
- Reduce the skillet heat to medium and add the remaining 2 tablespoons of oil.
- Add the diced onions and hash browns, cooking for 5–7 minutes (or as directed on the hash brown package). Season with half of the sea salt and black pepper. Cook until the hash browns are light golden brown.
- Assemble the Casserole:
- In the prepared casserole dish, layer the cooked hash browns and sausage. Stir to combine.
- Sprinkle the dairy-free cheddar shreds over the hash brown and sausage mixture.
- Mix the Egg Mixture:
- In a large bowl, whisk together the eggs, dairy-free milk, and the remaining salt and pepper.
- Pour the egg mixture evenly over the hash brown and sausage mixture. Use a spatula to ensure all ingredients are covered.
- Bake the Casserole:
- Place the casserole dish in the preheated oven and bake for 25 minutes, or until the eggs are set and the cheese has melted.
- Garnish and Serve:
- Remove from the oven and garnish with freshly chopped scallions or chives. Serve warm and enjoy!
