Ingredients

  • 810 small or medium stale croissants
  • 1 tablespoon olive oil
  • 1 pound breakfast sausage
  • ½ yellow onion, diced
  • 1 red bell pepper, diced
  • 4 ounces cream cheese, softened
  • 2 cups white cheddar cheese, grated
  • 3 green onions, sliced
  • ½ teaspoon paprika
  • 10 large eggs
  • 1 ¼ cups half and half
  • 1 tablespoon dijon mustard
  • 2 tablespoons hot sauce (like Frank’s or Tabasco)
  • ½ teaspoon kosher salt
  • ½ teaspoon freshly cracked black pepper
  • 2 tablespoons everything bagel seasoning
  • Additional sliced green onions for garnish

Instructions

  • Prepare the Sausage and Vegetables:
    Heat olive oil in a skillet over medium heat. Add the sausage and cook, breaking it apart with a spoon, until browned. Stir in the diced onion and red bell pepper, cooking until softened. Remove from heat and let the mixture cool to room temperature.
  • Mix the Filling:
    In a large bowl, combine the sausage mixture, cream cheese, 1 ½ cups of grated cheddar cheese, paprika, and sliced green onions. Mix until fully combined.
  • Prep the Croissants:
    Slice the croissants in half lengthwise. Grease a 9×13-inch baking dish and arrange the bottom halves of the croissants to cover the base. Spread the sausage mixture evenly over the croissants, then top with the croissant tops.
  • Make the Egg Mixture:
    In a blender or large mixing bowl, combine the eggs, half and half, dijon mustard, hot sauce, salt, and pepper. Blend or whisk until smooth and uniform. Reserve 2 tablespoons of the mixture.
  • Pour and Soak:
    Pour the remaining egg mixture evenly over the croissants. Cover the dish with foil and let it soak for at least 1 hour at room temperature or overnight in the refrigerator.
  • Bake the Casserole:
    Preheat your oven to 375°F. Brush the tops of the croissants with the reserved egg mixture and sprinkle everything bagel seasoning over them. Add the remaining grated cheddar cheese on top.
    Cover the dish with foil and bake for 30 minutes. Remove the foil and bake for an additional 15–20 minutes, or until the eggs are set and the top is golden brown.
  • Garnish and Serve:
    Remove the casserole from the oven, sprinkle with sliced green onions for garnish, and serve warm.
