Description

Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon smoked paprika
  • 1/2 cup milk
  • 1 large egg
  • 2 cups fresh or frozen corn kernels
  • 1/4 cup chopped green onions
  • 1/4 cup shredded cheddar cheese (optional)
  • Vegetable oil for frying

Instructions

  • In a large mixing bowl, whisk together the flour, baking powder, salt, black pepper, and smoked paprika.
  • In a separate bowl, beat the egg and mix in the milk until well combined.
  • Pour the wet mixture into the dry ingredients and stir until just combined, forming a thick, smooth batter.
  • Fold in the corn kernels, green onions, and shredded cheddar cheese (if using). Mix until the ingredients are evenly distributed.
  • Heat about 1/4 inch of vegetable oil in a large skillet over medium heat.
  • Scoop spoonfuls of the batter into the hot oil, flattening each slightly with the back of your spoon.
  • Fry the fritters for 2-3 minutes on each side, or until golden brown and crispy.
  • Remove the fritters from the skillet and place them on a paper towel-lined plate to drain excess oil.
