Description

Bring the classic comfort of lasagna to your table in a quick, one-pot dish with this Easy Lasagna Soup Recipe. Packed with savory beef, hearty noodles, a rich tomato base, and creamy ricotta, this soup delivers all the flavors of traditional lasagna without the time or effort. Ready in just 40 minutes, it’s a family-friendly meal perfect for busy nights.

Ingredients

  • 1 pound ground beef or Italian sausage
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 4 cups beef broth
  • 2 cups uncooked pasta (e.g., lasagna noodles, broken into pieces)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • Fresh basil leaves for garnish

Instructions

  • Brown the Meat: Heat a large pot or Dutch oven over medium heat. Add the ground beef or Italian sausage and cook until browned, breaking it up with a spoon. Drain excess fat if needed.
  • Sauté Aromatics: Stir in the chopped onion and minced garlic. Cook for 2–3 minutes, or until the onion becomes translucent and fragrant.
  • Build the Soup Base: Add the crushed tomatoes, beef broth, dried oregano, dried basil, and red pepper flakes (if using). Season with salt and pepper to taste. Stir well and bring the soup to a boil.
  • Cook the Pasta: Reduce the heat to medium and add the uncooked pasta to the pot. Cook according to package instructions, stirring occasionally, until the pasta is al dente (about 8–10 minutes).
  • Add Ricotta: Remove the pot from heat and stir in the ricotta cheese until the soup becomes creamy and well combined.
  • Serve: Ladle the soup into bowls and top with shredded mozzarella cheese and fresh basil leaves. Serve hot with garlic bread or a side salad.

Notes

  • Make Ahead: Prepare the soup base ahead of time and cook the pasta fresh when ready to serve for the best texture.
  • Freezing: For freezing, avoid adding the pasta and ricotta. Freeze the soup base and add these ingredients when reheating.
  • Variations: Swap ground beef for ground turkey or chicken for a lighter version. You can also use gluten-free pasta if needed.
  • Extra Garnish: Grated Parmesan or a drizzle of olive oil can elevate the dish even further.
  • Storage: Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop or in the microwave.
