Ingredients
- 2 cups of diced tomatoes
- ½ cup of cilantro, chopped
- ½ of a small red onion, finely chopped
- 1 jalapeño, minced (remove seeds for less spice)
- ½ lime, juiced
- 1 teaspoon of olive oil
- Pinch of salt
Instructions
- In a medium-sized bowl, add the diced tomatoes, chopped cilantro, finely chopped red onion, minced jalapeño, lime juice, olive oil, and a pinch of salt.
- Mix all the ingredients together gently until well combined.
- Taste and adjust the seasoning by adding more lime juice or salt, if needed.
- Cover and store the Pico de Gallo in an airtight container in the refrigerator for at least 15 minutes to let the flavors meld together.
- Serve as a dip with tortilla chips, or use it as a topping for tacos, grilled meats, or scrambled eggs.
Notes
- Spice Level: For a milder flavor, remove the seeds and membranes from the jalapeño. If you love heat, add an extra jalapeño or some chili flakes.
- Storage: Store in an airtight container in the refrigerator for up to 5 days. Stir before serving to redistribute the juices and flavors.
- Customizations: Feel free to add diced avocado, cucumber, or even a pinch of cumin for a unique twist.
