Ingredients

  • 1 pound sweet pork sausage
  • 2 to 3 medium Yukon Gold potatoes, diced (about 3 cups)
  • 1 green bell pepper, diced
  • 1 medium yellow onion, diced
  • 8 ounces mild or sharp cheddar cheese, grated
  • 1 tablespoon butter
  • 8 large eggs
  • Salt and pepper to taste
  • 1 cup salsa verde (homemade or store-bought)
  • 8 large burrito-sized flour tortillas

Instructions

  • Cook the sausage:
    Heat a large skillet over medium heat. Add the pork sausage and cook, breaking it into small pieces, until browned and cooked through. Remove the sausage from the skillet and set it aside.
  • Cook the potatoes and vegetables:
    Using the same skillet with the sausage drippings, add the diced potatoes. Cook for 8–10 minutes, stirring regularly, until tender and golden brown. If the skillet becomes too dry, add a small drizzle of olive oil.
    Add the diced bell pepper and onion to the skillet and cook for another 3–4 minutes until softened. Season with salt and pepper. Remove the skillet from heat.
  • Scramble the eggs:
    In a nonstick skillet, melt the butter over low heat. Whisk the eggs in a medium bowl until well blended, then pour into the skillet. Cook gently, stirring occasionally, until scrambled and just set. Avoid overcooking for soft, fluffy eggs.
  • Assemble the burritos:
    Lay a large flour tortilla flat on a clean surface. Add 1/8 of the sausage, 1/8 of the potato mixture, 1/8 of the scrambled eggs, and 1/8 of the grated cheddar cheese. Top with about 2 tablespoons of salsa verde.
  • Roll the burritos:
    Fold the sides of the tortilla over the filling, then roll it tightly into a burrito. Wrap the burrito in aluminum foil. Repeat with the remaining tortillas and fillings.
  • Freeze the burritos:
    Place the foil-wrapped burritos into a large, freezer-safe, resealable bag. Label the bag with the date and freeze. The burritos will keep fresh for up to three months.
  • Reheat the burritos:
    • Microwave: Remove foil, place on a microwave-safe plate, and heat on high for 4–5 minutes, turning once halfway through.
    • Skillet (Optional): Crisp up the reheated burrito in a nonstick skillet over medium heat for 2–3 minutes per side.
