Ingredients
For the Fries:
- 2 large portobello mushrooms
- ⅓ cup flour
- 2 eggs, beaten
- ¾ cup Panko breadcrumbs
- ¼ cup freshly grated parmesan cheese
- 1 ½ teaspoons Italian seasoning
- Salt and pepper, to taste
For the Aioli Dipping Sauce:
- ⅓ cup mayonnaise
- 2 teaspoons fresh lemon juice
- ½ teaspoon lemon zest (optional)
- 1 small clove garlic, pressed or finely minced
- Freshly cracked black pepper, to taste
- Sea salt, optional
Instructions
- Preheat the Oven:
Preheat your oven to 425°F (225°C). Place a wire rack on a baking sheet and lightly coat it with cooking spray for even crispiness. - Prepare the Mushrooms:
Remove the stems from the mushrooms and use a spoon to scrape out the gills. Discard the gills. Slice the mushrooms into thin strips, about ¼-inch thick. - Set Up the Coating Station:
- Place flour in one bowl and season it with a pinch of salt and pepper.
- Beat eggs in a second bowl.
- Combine Panko breadcrumbs, parmesan cheese, and Italian seasoning in a third bowl.
- Coat the Mushroom Slices:
Dip each mushroom strip into the flour, ensuring an even coat. Next, dip it into the beaten eggs, letting the excess drip off. Finally, press it into the breadcrumb mixture, coating it thoroughly. - Bake the Fries:
Arrange the coated mushroom slices on the prepared rack. Bake for 10-14 minutes, or until the fries are golden brown and crispy. Keep an eye on them to prevent burning. - Make the Aioli:
In a small bowl, combine mayonnaise, lemon juice, lemon zest, garlic, black pepper, and a pinch of sea salt. Mix well and refrigerate until ready to serve. - Serve:
Remove the fries from the oven and serve immediately with the aioli or your favorite dipping sauce.
Notes
- Crispy Tip: Using a wire rack ensures air circulation for extra crispy fries.
- Customize the Flavor: Add cayenne pepper or smoked paprika to the breadcrumb mixture for a spicy twist.
- Reheating: If you have leftovers, reheat them in the oven or air fryer to maintain crispiness.
