Description

Peach Crumb Bars are the ultimate summer treat, combining a buttery crust, a luscious peach filling, and a crumbly topping that’s hard to resist. This dessert is easy to make and perfect for every occasion, from family picnics to an afternoon snack. Each bite delivers the fresh sweetness of ripe peaches with a hint of cinnamon spice.

Ingredients

For the crust and crumb topping:

  • 1 3/4 cups (230g) all-purpose flour
  • 3/4 cup (150g) granulated sugar
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground cinnamon
  • 12 tablespoons (1 1/2 sticks) cold unsalted butter, cubed
  • 2 teaspoons vanilla extract

For the peach filling:

    • 1 large egg
    • 1/4 cup sour cream
    • 1/2 cup (100g) granulated sugar
    • 1 tablespoon all-purpose flour
    • 2 teaspoons vanilla extract
    • 1/4 teaspoon ground cinnamon
    • 1/4 teaspoon kosher salt
    • 3 medium peaches (about 1 pound), pitted and thinly sliced

Instructions

Preheat the Oven and Prep the Pan:
Preheat your oven to 375°F. Grease an 8×8-inch baking pan with butter, then line the bottom and two sides with parchment paper, leaving a bit of overhang for easy removal.

Make the Crust and Topping:
In a large bowl, mix the flour, granulated sugar, salt, and cinnamon. Add the cold, cubed butter and vanilla extract. Use your fingers to work the butter into the dry ingredients until the mixture resembles coarse crumbs and holds together when squeezed. Reserve 3/4 cup of the mixture for the crumb topping and press the rest into the prepared pan to form an even crust.

Prepare the Peach Filling:
In a medium bowl, whisk together the egg, sour cream, granulated sugar, flour, vanilla extract, cinnamon, and salt until smooth. Add the sliced peaches and gently toss them to coat evenly in the mixture.

 Assemble the Bars:
Spread the peach filling over the crust, ensuring the peaches are evenly distributed. Sprinkle the reserved crumb topping over the filling, squeezing it in your hands to create larger crumbs for a rustic look.

 Bake:
Bake the bars in the preheated oven for about 50 minutes, or until the crumb topping is golden and feels crisp to the touch.

Cool and Serve:
Let the pan cool on a wire rack for at least 1 hour before slicing into squares. Serve at room temperature or chilled for a refreshing summer dessert.
