Ingredients
- 1 pound boneless, skinless chicken breast or thighs, cut into 1-inch pieces
- 1/2 pound broccoli, cut into florets
- 1/2 medium onion, thickly sliced
Marinade:
-
- 3 tablespoons olive oil
- 1 tablespoon fresh minced ginger
- 3 cloves garlic, minced
- 2 tablespoons low-sodium soy sauce (or Tamari for gluten-free)
- 1 tablespoon rice vinegar (or distilled white vinegar for gluten-free)
- 1 teaspoon sesame oil
- 1 teaspoon smoked paprika
- 2 teaspoons honey
- 1 teaspoon hoisin sauce
- Salt and ground black pepper, to taste
Instructions
- Prepare the Marinade
In a medium mixing bowl, whisk together olive oil, minced ginger, minced garlic, soy sauce, rice vinegar, sesame oil, smoked paprika, honey, hoisin sauce, salt, and black pepper. - Marinate the Chicken and Vegetables
- Place the chicken pieces in one bowl and the broccoli florets with onion slices in another bowl.
- Split the marinade evenly between the two bowls. Toss the chicken and vegetables separately until well coated.
- Preheat the Air Fryer
Preheat your air fryer to 380°F (193°C) for about 3-5 minutes. - Cook the Chicken
Add the marinated chicken pieces to the air fryer basket in a single layer. Air fry at 380°F for 10 minutes, shaking the basket or flipping the chicken halfway through for even cooking. - Add the Vegetables
After 10 minutes, add the broccoli and onions to the air fryer with the chicken. Continue cooking for 8-11 minutes, stirring halfway through. - Check for Doneness
Ensure the chicken is fully cooked to an internal temperature of 165°F (74°C), and the broccoli is tender with slightly crispy edges. - Serve and Garnish
Transfer the chicken and broccoli to a serving plate. Garnish with sesame seeds, a squeeze of fresh lemon juice, or additional soy sauce if desired. Serve warm and enjoy!
Notes
- For Even Cooking: Cut the chicken and broccoli into similar-sized pieces to ensure they cook evenly.
- Marinate for Extra Flavor: While 10 minutes of marinating is fine, letting the chicken sit in the marinade for up to 2 hours in the fridge enhances the flavor.
- Make It Gluten-Free: Swap soy sauce with Tamari and ensure your hoisin sauce is gluten-free.
- Vegetable Substitutions: Add bell peppers, carrots, or snap peas for variety. Adjust cooking time slightly for harder vegetables.
- Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the air fryer at 350°F for 3-4 minutes to maintain texture.
