Ingredients

  • 4 medium ripe tomatoes, diced

  • 2 large boneless, skinless chicken breasts

  • ½ cup grated Parmesan cheese
  • ¼ cup reserved pasta water

Instructions

  • Prepare the Bruschetta Topping
    • Dice the tomatoes and place them in a medium-sized mixing bowl.
    • Add minced garlic, chopped basil, olive oil, balsamic vinegar, salt, and black pepper. Mix well and set aside.
  • Cook the Pasta
    • Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente.
    • Reserve ¼ cup of pasta water before draining. Toss the drained pasta with olive oil to keep it from sticking, and set it aside.
  • Season and Cook the Chicken
    • Season the chicken breasts with Italian seasoning, garlic powder, salt, and black pepper.
    • Heat olive oil in a large skillet over medium heat. Cook the chicken for 5-6 minutes per side or until golden brown and fully cooked.

  • Combine the Pasta and Toppings
    • In the same skillet used for cooking the chicken, add the cooked pasta along with the reserved pasta water and grated Parmesan cheese. Toss to coat evenly.
