- 2 tablespoons extra virgin olive oil
- 1 teaspoon balsamic vinegar
- Salt and black pepper to taste
- 2 large boneless, skinless chicken breasts
- 1 teaspoon Italian seasoning
- ½ teaspoon garlic powder
- 1 tablespoon olive oil (for cooking the chicken)
- 12 ounces spaghetti, fettuccine, or your pasta of choice
- 1 tablespoon olive oil (for tossing pasta)
- ½ cup grated Parmesan cheese
- ¼ cup reserved pasta water
Instructions
- Prepare the Bruschetta Topping
- Dice the tomatoes and place them in a medium-sized mixing bowl.
- Add minced garlic, chopped basil, olive oil, balsamic vinegar, salt, and black pepper. Mix well and set aside.
- Cook the Pasta
- Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente.
- Reserve ¼ cup of pasta water before draining. Toss the drained pasta with olive oil to keep it from sticking, and set it aside.
- Season and Cook the Chicken
- Season the chicken breasts with Italian seasoning, garlic powder, salt, and black pepper.
- Heat olive oil in a large skillet over medium heat. Cook the chicken for 5-6 minutes per side or until golden brown and fully cooked.
- Remove the chicken from the skillet and let it rest for a few minutes. Slice it into thin strips.
- Combine the Pasta and Toppings
- In the same skillet used for cooking the chicken, add the cooked pasta along with the reserved pasta water and grated Parmesan cheese. Toss to coat evenly.
- Add the sliced chicken and spoon the bruschetta topping over the pasta. Mix gently to combine all the flavors.
- Garnish and Serve
- Serve immediately, garnished with additional basil or Parmesan cheese if desired. Enjoy!
Notes
- Use Fresh Ingredients: Ripe tomatoes, fresh basil, and high-quality olive oil make a huge difference in flavor.
- Don’t Overcook the Pasta: Al dente pasta holds its texture and absorbs the flavors better.
- Reserve the Pasta Water: The starchy water helps create a light sauce that binds everything together.
- Marinate the Chicken: For even more flavor, marinate the chicken in olive oil, garlic, and Italian seasoning for 30 minutes before cooking.
- Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat with a splash of olive oil or water to keep the pasta from drying out.
