Ingredients

  • 1 ½ pounds beef stew meat, cut into bite-sized pieces
  • 1 pound baby potatoes, halved
  • 4 tablespoons unsalted butter, melted
  • 3 cloves garlic, minced
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon dried thyme
  • ½ teaspoon dried rosemary
  • ½ teaspoon salt (or to taste)
  • ¼ teaspoon black pepper
  • ¼ cup beef broth
  • 1 tablespoon olive oil

Instructions

Prepare the Ingredients

    • Cut the beef stew meat into bite-sized pieces.
    • Halve the baby potatoes for even cooking.
    • Mince the garlic cloves.
  • Sear the Beef (Optional for More Flavor)
    • Heat olive oil in a pan over medium-high heat.
    • Sear the beef bites for 2-3 minutes per side until browned.
  • Mix the Garlic Butter Sauce
    • In a bowl, combine melted butter, minced garlic, onion powder, smoked paprika, thyme, rosemary, salt, and pepper.
  • Assemble in the Slow Cooker
    • Place baby potatoes at the bottom of the slow cooker.
    • Add the beef bites on top.
    • Pour the garlic butter sauce evenly over everything.
    • Add the beef broth for moisture.
  • Slow Cook
    • Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours, until the beef is tender and the potatoes are soft.
  • Serve & Enjoy
    • Stir everything together before serving.
    • Garnish with fresh parsley or grated Parmesan cheese if desired.

Notes

  • Searing the beef enhances flavor but can be skipped if you’re short on time.
  • Adjust the seasonings to your taste—add red pepper flakes for a spicy kick.
  • For extra richness, drizzle a little more melted butter before serving.
  • Store leftovers in an airtight container for up to 4 days in the fridge or 3 months in the freezer.
  • Reheat in the microwave, oven, or stovetop with a splash of beef broth for moisture.
