Instructions

  • Cook the Sausage:
    • Heat olive oil in a large skillet over medium-high heat.

    • Remove the sausage from the skillet and set aside.
  • Sauté the Vegetables:
    • In the same skillet, add the chopped onions and diced bell peppers.
    • Sauté for 3 minutes until they begin to soften.
    • Stir in the minced garlic and cook for another minute until fragrant.
  • Add the Rice and Seasonings:
    • Stir in the uncooked rice and let it toast for about 1 minute.
    • Add Cajun seasoning, paprika, dried thyme, salt, and black pepper.
  • Simmer Everything Together:
    • Pour in the chicken broth and diced tomatoes with their juices.
    • Stir well and bring the mixture to a light boil.
    • Reduce the heat to low, cover, and let it simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed.
  • Finish and Serve:
