Ingredients

  • 2 large chicken breasts, diced
  • 1 tbsp olive oil
  • 2 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • ½ cup shredded mozzarella cheese
  • 4 large flour tortillas
  • ½ cup creamy garlic sauce
  • Fresh parsley (for garnish)

Instructions

  • Cook the Chicken
    • Heat olive oil in a skillet over medium heat.
    • Add diced chicken and season with garlic powder, onion powder, paprika, salt, and pepper.
    • Cook for 6–8 minutes until golden brown and fully cooked. Remove from heat.
  • Assemble the Quesadillas
    • Spread a layer of creamy garlic sauce on one side of each tortilla.
    • Sprinkle cheddar and mozzarella cheese over half of each tortilla.
    • Add a generous portion of the cooked chicken on top of the cheese.
    • Fold the tortilla in half to cover the filling.
  • Cook the Quesadillas
    • Heat a clean skillet over medium heat and lightly grease with olive oil.
    • Place each quesadilla in the skillet and cook for 2–3 minutes per side until golden brown and crispy.
    • Remove from heat and let cool slightly.
  • Garnish and Serve
    • Slice into wedges and sprinkle with fresh parsley.
    • Serve with extra creamy garlic sauce, sour cream, or salsa for dipping.

Notes

    • For extra crunch, brush the tortillas lightly with olive oil or butter before cooking.
    • Make it spicy by adding jalapeños or a dash of hot sauce inside the quesadilla.
    • Storage: Keep leftovers in an airtight container in the fridge for up to 3 days. Reheat in a skillet for the best texture.
    • Freezing Option: Assemble quesadillas, freeze them individually, and cook straight from frozen, adding extra minutes to the cooking time.
    • Air Fryer Alternative: Cook at 375°F for 6–8 minutes, flipping halfway for even crispiness.
