Ingredients

  • 2 cups fresh spinach, chopped
  • 1 cup feta cheese, crumbled
  • 4 medium-sized tortillas (flour, whole wheat, or gluten-free)
  • 2 tablespoons olive oil or butter (for cooking)

Optional Add-Ins:

  • ¼ cup sun-dried tomatoes, chopped
  • ¼ cup black olives, sliced
  • ½ cup grilled chicken, diced

Instructions

    • Prepare the Ingredients
      • Rinse and chop the spinach.
      • Crumble the feta cheese into a bowl.
      • Prepare any additional add-ins, such as sun-dried tomatoes, olives, or grilled chicken.
    • Assemble the Quesadillas
      • Lay a tortilla flat and spread a portion of the chopped spinach and crumbled feta over one half.
      • Add any desired optional ingredients on top.
      • Fold the tortilla in half, pressing gently to secure the filling.
    • Cook the Quesadillas
      • Heat a non-stick skillet over medium heat and add a small amount of olive oil or butter.
      • Place the folded quesadilla in the skillet and cook for 2-3 minutes until golden brown and crispy.
      • Flip and cook for another 2-3 minutes on the other side.
    • Slice and Serve
      • Remove the quesadilla from the skillet and let it cool for a minute.
      • Slice into wedges and serve warm with your favorite dips like tzatziki, hummus, or marinara sauce.

Notes

  • For a crispier texture, cook the quesadilla on medium heat to avoid burning while ensuring an even crisp.
  • For a vegan version, substitute feta with a plant-based cheese alternative.
  • For extra flavor, try adding roasted red peppers or a drizzle of balsamic glaze.
  • Storage Tip: Keep leftovers in an airtight container in the fridge for up to 3 days. Reheat in a skillet or air fryer for the best texture.
