Description

This Zesty Cheesy Ranch Dip is the perfect blend of creamy, cheesy, and slightly spicy flavors. Made with Rotel tomatoes, cream cheese, sour cream, ranch seasoning, and shredded cheese, this dip is baked to bubbly perfection. Whether served with tortilla chips, crackers, or fresh veggies, it’s a must-have appetizer for any gathering.

Ingredients

    • Rotel Tomatoes: 1 can (diced tomatoes with green chilies) for a zesty, slightly spicy kick.
    • Cream Cheese: 8 oz, softened, for a rich and creamy base.
    • Sour Cream: ½ cup, to add tanginess and smooth texture.
    • Ranch Seasoning Mix: 1 packet, for a savory, herby flavor boost.
    • Shredded Cheese: 1½ cups (cheddar or Mexican blend) for a gooey, cheesy finish.
    • Chopped Fresh Cilantro (optional): 2 tbsp, for a pop of color and fresh herbal flavor.
    • Optional Add-Ins: Diced jalapeños for extra heat or cooked, crumbled bacon for a smoky touch.

Instructions

    • Preheat & Prep:
      • Preheat the oven to 375°F (190°C).
      • Lightly grease a baking dish or oven-safe skillet.
    • Mix the Ingredients:
      • In a large mixing bowl, combine softened cream cheese, sour cream, and ranch seasoning mix. Stir until smooth.
      • Fold in the Rotel tomatoes (drained) and shredded cheese. Add optional jalapeños or bacon if using.
    • Bake to Perfection:
      • Transfer the mixture to the prepared baking dish.
      • Bake for 20-25 minutes, until the cheese is melted and bubbly.
    • Garnish & Serve:
      • Sprinkle with chopped fresh cilantro for extra freshness.
      • Serve warm with tortilla chips, crackers, or sliced veggies.

Notes

  • For a Thicker Dip: Use less sour cream or add more shredded cheese.
  • Slow Cooker Method: Combine ingredients in a slow cooker and cook on low for 2-3 hours, stirring occasionally.
  • Spice Level: Adjust heat by using mild or hot Rotel, or adding extra jalapeños.
  • Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Reheating: Warm in the oven at 350°F for 10 minutes or microwave in 30-second intervals until heated through.
