Whether you’re preparing a family dinner, meal prepping for the week, or looking for a crowd-pleasing dish, this casserole is simple, delicious, and incredibly comforting.

Ingredients

  • 4 large russet potatoes, peeled and cubed
  • 2 cups cooked chicken breast, diced
  • 1 head broccoli, cut into florets
  • 1 cup sour cream or Greek yogurt
  • 1/2 cup milk or skim milk
  • 2 cups shredded cheddar cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1/2 cup breadcrumbs
  • 2 tablespoons melted butter

Instructions

  • Preheat the oven to 375°F (190°C) and grease a baking dish.
  • In a pot of salted boiling water, cook the cubed potatoes until fork-tender. Drain and set aside.
  • In the same pot, steam the broccoli until slightly tender. Drain and set aside.
  • In a large bowl, mix sour cream (or Greek yogurt), milk, garlic powder, onion powder, salt, and pepper until well combined.
  • Add the cooked potatoes, diced chicken, broccoli, and 1½ cups of cheddar cheese to the bowl, stirring until evenly coated.
  • Transfer the mixture to the prepared baking dish and spread evenly.
  • In a small bowl, mix the breadcrumbs with melted butter, then sprinkle over the casserole. Top with the remaining ½ cup of cheddar cheese.
  • Bake uncovered for 25–30 minutes, or until the cheese is melted and golden brown.
  • Let cool slightly before serving. Enjoy!

Notes

    • For a lower-carb version, swap potatoes for cauliflower florets.
    • To make it spicier, add a pinch of red pepper flakes or cayenne pepper.
    • Store leftovers in the refrigerator for up to 4 days and reheat in the oven or microwave.
    • To freeze, wrap the casserole tightly and store for up to 3 months. Thaw before baking.
    • Try using Monterey Jack, mozzarella, or a mix of cheeses for a different flavor profile.
