Description

This Caramel Pecan Delight Cake is the perfect balance of gooey caramel, crunchy pecans, and a golden buttery cake topping. With rich layers of sweet and salty flavors, this dessert is an irresistible treat for holidays, gatherings, or a cozy night at home. Serve it warm with a scoop of ice cream or a drizzle of extra caramel for the ultimate indulgence!

Ingredients

For the Pecan Layer:

  • Eggs, lightly beaten
  • Packed brown sugar
  • Caramel topping
  • Salted caramel topping
  • Melted butter
  • Pecan halves

For the Topping:

  • Butter pecan cake mix
  • Melted butter

Instructions

  • Preheat the Oven – Set the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  • Mix the Pecan Layer – In a bowl, whisk together eggs, brown sugar, caramel topping, salted caramel topping, and melted butter. Stir in the pecan halves until well coated. Pour the mixture into the baking dish.
  • Add the Cake Mix – Evenly sprinkle the butter pecan cake mix over the pecan mixture.
  • Drizzle with Butter – Pour the melted butter over the top, making sure to cover as much of the dry cake mix as possible.
  • Bake to Perfection – Bake for 40–45 minutes, or until the top is golden brown and bubbly.
  • Cool & Serve – Let the cake cool slightly before slicing. Serve warm, optionally with vanilla ice cream or whipped cream.

Notes

  • For extra crunch, toast the pecans before adding them to the mixture.
  • If you like a deeper caramel flavor, use dark brown sugar instead of light brown sugar.
  • For a crispier topping, broil the cake for the last 2–3 minutes of baking.
  • Store leftovers in an airtight container in the fridge for up to 4 days. Reheat before serving for the best texture.
