Description

These Lucky Green Crinkle Cookies are soft, chewy, and bursting with festive charm! Made with cake mix, they are incredibly easy to prepare, requiring just a few simple ingredients. Their vibrant green color makes them perfect for St. Patrick’s Day, Christmas, or any fun celebration. With a signature crinkled look and a dusting of powdered sugar, these cookies are as delicious as they are eye-catching!

Ingredients

  • 1 box (15.25 oz) white cake mix (about 3 cups)
  • 2 large eggs
  • 1/3 cup vegetable oil
  • 1/4 teaspoon Kelly green gel food coloring
  • 3 tablespoons granulated sugar
  • 6 tablespoons powdered sugar

Instructions

  • Preheat Oven – Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

  • Make the Dough – In a large mixing bowl, combine the white cake mix, eggs, and vegetable oil. Stir until a soft dough forms. Add the green gel food coloring and mix until the color is evenly distributed.

  • Chill the Dough – For easier handling, refrigerate the dough for 30 minutes.

  • Prepare the Sugar Coating – Place granulated sugar in one small bowl and powdered sugar in another.

  • Shape the Cookies – Scoop tablespoon-sized portions of dough and roll into smooth balls. First, coat each dough ball in granulated sugar, then roll it generously in powdered sugar.

  • Bake – Arrange the coated dough balls 2 inches apart on the prepared baking sheet. Bake for 8-10 minutes or until the edges are set and the tops develop a crinkled effect.

  • Cool & Serve – Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack. Enjoy!

Notes

  • Chilling the dough helps prevent the cookies from spreading too much and makes them easier to roll.
  • Double-coating in granulated and powdered sugar ensures the best crinkle effect.
  • Use gel food coloring instead of liquid for a more vibrant green without altering the dough’s consistency.
  • Store cookies in an airtight container at room temperature for up to 4 days or freeze for up to 3 months.
