Description

This Minty Delight Layered Dessert is the ultimate no-bake treat, featuring a crunchy Oreo crust, a silky cheesecake layer, and a refreshing mint-flavored pudding. Perfect for St. Patrick’s Day, Christmas, or any occasion, this vibrant green dessert is as beautiful as it is delicious. With a cool, creamy texture and just the right balance of chocolate and mint, it’s a guaranteed crowd-pleaser

Ingredients

  • 36 Oreo cookies, finely crushed
  • 1/2 cup (1 stick) unsalted butter, melted
  • 8 ounces cream cheese, softened to room temperature
  • 1 cup powdered sugar
  • 16 ounces frozen whipped topping, thawed and divided
  • Three 3.4-ounce boxes of cheesecake instant pudding mix
  • 3 cups cold milk
  • 1 teaspoon mint extract
  • Green gel food coloring

Instructions

  • Prepare the Crust – In a mixing bowl, combine the crushed Oreo cookies with melted butter. Press into the bottom of a 9×13-inch baking dish and bake at 375°F (190°C) for 8-10 minutes (or refrigerate for a no-bake option).

  • Cream Cheese Layer – Beat the cream cheese with powdered sugar until smooth. Fold in 8 ounces of whipped topping, then spread evenly over the cooled crust.

  • Mint Pudding Layer – Whisk the pudding mixes and cold milk until thickened. Stir in mint extract and green gel food coloring until you reach your desired shade. Fold in the remaining whipped topping, then spread over the cream cheese layer.

  • Chill – Cover and refrigerate for at least 4-6 hours (or overnight) to allow the layers to set.

  • Serve & Enjoy – Garnish with crushed Oreos, whipped topping, or green sprinkles. Slice and serve chilled!

Notes

  • For a stronger mint flavor, add a few extra drops of mint extract.
  • Use gel food coloring instead of liquid to avoid altering the pudding’s consistency.
  • For a crunchier base, bake the crust for 8-10 minutes before adding layers.
  • Make-ahead friendly—this dessert tastes even better after chilling overnight.
  • Store leftovers in the fridge for up to 4-5 days or freeze for up to a month
