Ingredients

- 1 tablespoon vegetable oil
- 1 cup broccoli florets
- 1 red bell pepper, sliced
- 1 cup baby sweetcorn, chopped
- 1 cup mangetout (snow peas)
For the Teriyaki Sauce:
- 2 tablespoons light soy sauce
- 1 tablespoon rice wine vinegar
- 1 tablespoon honey
- 1 tablespoon brown sugar
- 2 cloves garlic, minced
- 1-inch piece fresh ginger, minced
For Garnish:
- Sesame seeds
- Chopped scallions

Prepare the Chicken:
- Toss the diced chicken with cornflour, salt, and pepper until evenly coated.

- Heat a large frying pan or wok over medium-high heat. Add vegetable oil and cook the chicken until golden and crispy on both sides. Remove from the pan and set aside.

- In the same pan, add broccoli, red bell pepper, baby sweetcorn, and mangetout. Stir-fry for 4-5 minutes until slightly charred yet crisp.
