Ingredients
- 1 cup all-purpose flour
- 2 tablespoons granulated sugar
- 2 teaspoons baking powder
- 1 cup milk
- 2 tablespoons melted butter
- 1 large egg
- 1 teaspoon vanilla extract
Instructions
- In a large bowl, whisk together the flour, sugar, and baking powder.
- Add the milk, melted butter, egg, and vanilla extract to the dry ingredients. Stir until just combined—small lumps are okay.
- Heat a nonstick skillet or griddle over medium heat. Lightly grease with butter or oil.
- Pour about 1/3 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges appear set, about 2-3 minutes.
- Flip the pancakes and cook for another 1-2 minutes until golden brown.
- Remove from the skillet and serve warm with syrup, butter, or your favorite toppings.
Notes
- Do not overmix the batter—lumps will ensure light, fluffy pancakes.
- For extra fluffiness, let the batter rest for 5-10 minutes before cooking.
- Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the toaster or microwave.
- Freeze pancakes by stacking them with parchment paper in between, then store in a freezer bag for up to 2 months.
