Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 1 cup milk
  • 2 tablespoons melted butter
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions

  • In a large bowl, whisk together the flour, sugar, and baking powder.
  • Add the milk, melted butter, egg, and vanilla extract to the dry ingredients. Stir until just combined—small lumps are okay.
  • Heat a nonstick skillet or griddle over medium heat. Lightly grease with butter or oil.
  • Pour about 1/3 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges appear set, about 2-3 minutes.
  • Flip the pancakes and cook for another 1-2 minutes until golden brown.
  • Remove from the skillet and serve warm with syrup, butter, or your favorite toppings.

Notes

  • Do not overmix the batter—lumps will ensure light, fluffy pancakes.
  • For extra fluffiness, let the batter rest for 5-10 minutes before cooking.
