  • 17.3 ounces puff pastry (2 sheets)
  • 9 ounces frozen spinach, thawed and drained
  • 3 ounces feta cheese, crumbled
  • 1 cup shredded mozzarella cheese
  • Salt and freshly ground black pepper to taste
  • 3 tablespoons melted salted butter

Instructions

  • Preparation: Preheat your oven to 400°F (200°C) and lightly grease a baking sheet.

  • Prepare the Filling: In a medium bowl, combine the thawed and drained spinach, crumbled feta, shredded mozzarella, salt, and pepper. Mix until well combined.

  • Assemble the Pastries:

    • Lay out the puff pastry sheets on a clean surface.
    • Brush each sheet with melted butter.
    • Evenly spread the spinach and cheese mixture over each pastry sheet.
    • Using a sharp knife or pizza cutter, slice each sheet into strips approximately 1 to 1.5 inches wide.
    • For each strip, roll both ends towards the center to create a double spiral.
    • Place three spirals together on the prepared baking sheet, positioning them to form a shamrock shape. If desired, use a small piece of pastry to create a stem.
  • Bake: Brush the assembled shamrocks with the remaining melted butter. Bake for 20-23 minutes, or until the pastries are golden brown and puffed.
