Ingredients
- 1 pound ground beef
- 1 medium green bell pepper, chopped
- 1 medium onion, chopped
- 1 can (10.75 ounces) condensed tomato soup
- 1 package (3.5 ounces) sliced pepperoni
- 2 cups shredded mozzarella cheese
- 1 package (32 ounces) frozen tater tots
Instructions
- Preheat the oven to 375°F (190°C). Grease a 9×13-inch baking dish and set aside.
- In a large skillet over medium heat, cook the ground beef, chopped bell pepper, and onion until the beef is browned and the vegetables are soft. Drain any excess grease.
- Stir in the condensed tomato soup, mixing well to coat the beef and vegetables.
- Spread the beef mixture evenly in the prepared baking dish. Layer half of the pepperoni slices over the meat.
- Sprinkle 1 cup of shredded mozzarella cheese over the mixture, then arrange the tater tots in a single layer on top.
- Bake uncovered for 30 minutes. Remove from the oven, sprinkle the remaining 1 cup of mozzarella cheese over the tots, and add the remaining pepperoni slices.
- Return to the oven and bake for an additional 15-20 minutes, or until the cheese is melted and the tater tots are golden brown.
- Let cool for a few minutes before serving. Enjoy!
Notes
- For extra crispiness, bake the tater tots for 10 minutes before adding them to the casserole.
- Try swapping the ground beef for Italian sausage or ground turkey for a different flavor.
- Add mushrooms, olives, or jalapeños for extra pizza-inspired toppings.
- Leftovers can be stored in the refrigerator for up to 3 days and reheated in the oven or microwave.
- To freeze, assemble the casserole but don’t bake it. Cover tightly and freeze for up to 2 months. Bake directly from frozen, adding an extra 15-20 minutes to the cooking time.
