Ingredients

  • 4 boneless, skinless chicken breasts (or thighs)
  • 1.5 lbs baby potatoes, halved or quartered
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • For the Garlic Parmesan Sauce:
    • 4 tablespoons unsalted butter, melted
    • 5 cloves garlic, minced
    • 1 cup heavy cream
    • 1 cup grated Parmesan cheese
    • 1 teaspoon dried thyme
    • 1 teaspoon dried rosemary
    • ½ teaspoon red pepper flakes (optional)

For Garnish:

    • Fresh parsley, chopped

Instructions

  • Season the Chicken and Potatoes – Toss the potatoes with olive oil, salt, pepper, and paprika. Season the chicken with salt, pepper, and Italian seasoning.
