Description

Ingredients

    • 8 wooden skewers, soaked in water for 30 minutes
    • 2 boneless, skinless chicken breasts (about 1 pound), cut into 1-inch cubes
    • 1 tablespoon extra virgin olive oil
    • 1 teaspoon kosher salt
    • ½ teaspoon black pepper
    • ½ cup melted cowboy butter (homemade or store-bought)
    • Chopped fresh parsley for garnish


Instructions

  • Prepare the Chicken – In a large bowl, toss the chicken cubes with olive oil, salt, and black pepper until evenly coated.
  • Assemble the Skewers – Thread 4-5 pieces of seasoned chicken onto each wooden skewer, leaving a small space between each piece for even cooking.
  • Cooking Methods:
    • Grill: Preheat the grill to medium-high heat. Cook skewers for 10-12 minutes, turning occasionally, until the chicken is fully cooked and slightly charred.
    • Oven: Preheat oven to 400°F (200°C). Arrange skewers on a baking sheet lined with parchment paper and bake for 15-20 minutes, flipping once.
    • Air Fryer: Preheat air fryer to 400°F (200°C). Place skewers in a single layer and cook for 11-12 minutes, flipping halfway through.
  • Add the Cowboy Butter – Once cooked, remove the skewers from heat and brush generously with melted cowboy butter.
  • Garnish and Serve – Sprinkle with fresh parsley and serve immediately with extra cowboy butter for dipping.

Notes

  • If using metal skewers, there’s no need to soak them before cooking.
  • Marinating the chicken in cowboy butter before cooking enhances the flavor even more.
  • Leftover skewers can be stored in an airtight container in the refrigerator for up to 4 days.
