Description

This meatloaf is anything but ordinary! A flavorful blend of ground beef and pork, loaded with Swiss cheese, crispy bacon, and mushrooms, and topped with a sweet and tangy ketchup glaze. Ingredients

  • 1 pound ground beef
  • 1/2 pound ground pork
  • 1 cup breadcrumbs
  • 1/2 cup milk
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup finely chopped onions
  • 1 cup finely chopped mushrooms
  • 4 slices bacon, cooked and crumbled
  • 1 cup shredded Swiss cheese
  • 2 large eggs
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon ketchup
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup ketchup (for topping)

Instructions

  • Preheat Oven: Set your oven to 375°F (190°C) and grease a baking dish or line it with parchment paper.
  • Mix Ingredients: In a large bowl, combine ground beef, ground pork, breadcrumbs, milk, Parmesan cheese, onions, mushrooms, bacon, and Swiss cheese.
  • Season and Bind: Add eggs, Worcestershire sauce, 1 tablespoon of ketchup, garlic powder, thyme, salt, and black pepper. Mix gently until well incorporated.
  • Shape the Loaf: Transfer the mixture to the prepared baking dish and shape it into a loaf. Smooth the top evenly.
  • Add the Glaze: Spread the 1/2 cup of ketchup over the top of the meatloaf for a rich, caramelized finish.
  • Bake: Place the meatloaf in the oven and bake for 50-60 minutes or until the internal temperature reaches 160°F (71°C).
  • Rest and Serve: Let the meatloaf rest for 10 minutes before slicing. This ensures it remains juicy and easy to cut.

Notes

    • For extra moisture, use fresh breadcrumbs instead of dry ones.
    • You can swap Swiss cheese with cheddar or mozzarella for a different flavor.
