Ingredients
- 4 chicken breasts
- 1 tablespoon olive oil or avocado oil
- 1 teaspoon paprika
- 1 teaspoon salt, divided
- ¼ teaspoon garlic powder
- ¼ teaspoon onion powder
- 4 ounces cream cheese, softened
- ¼ cup grated Parmesan
- 2 tablespoons mayonnaise
- 1 ½ cups chopped fresh spinach
- 1 teaspoon garlic, minced
- ½ teaspoon red pepper flakes
Instructions
- Preheat the oven to 375°F (190°C).
- Slice a pocket into each chicken breast, being careful not to cut all the way through.
- Rub the chicken with olive oil and season with paprika, ½ teaspoon salt, garlic powder, and onion powder.
- In a bowl, mix the cream cheese, Parmesan, mayonnaise, spinach, minced garlic, red pepper flakes, and the remaining ½ teaspoon salt until well combined.
- Stuff each chicken breast with the spinach mixture, securing with toothpicks if needed.
- Place the stuffed chicken on a greased baking dish and bake for 25-30 minutes, or until the internal temperature reaches 165°F (75°C).
- Let the chicken rest for 5 minutes before serving. Enjoy!
