Ingredients

  • 4 chicken breasts
  • 1 tablespoon olive oil or avocado oil
  • 1 teaspoon paprika
  • 1 teaspoon salt, divided
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • 4 ounces cream cheese, softened
  • ¼ cup grated Parmesan
  • 2 tablespoons mayonnaise
  • 1 ½ cups chopped fresh spinach
  • 1 teaspoon garlic, minced
  • ½ teaspoon red pepper flakes

Instructions

  • Preheat the oven to 375°F (190°C).
  • Slice a pocket into each chicken breast, being careful not to cut all the way through.
  • Rub the chicken with olive oil and season with paprika, ½ teaspoon salt, garlic powder, and onion powder.
  • In a bowl, mix the cream cheese, Parmesan, mayonnaise, spinach, minced garlic, red pepper flakes, and the remaining ½ teaspoon salt until well combined.
  • Stuff each chicken breast with the spinach mixture, securing with toothpicks if needed.
  • Place the stuffed chicken on a greased baking dish and bake for 25-30 minutes, or until the internal temperature reaches 165°F (75°C).
  • Let the chicken rest for 5 minutes before serving. Enjoy!
