Ingredients
Bottom Crust Layer:
- 1 cup all-purpose flour
- ½ cup unsalted butter
- 2 tablespoons water
Filling:
- 1 cup water
- ½ cup unsalted butter
- 1 cup all-purpose flour
- 3 large eggs
- 3 tablespoons powdered sugar
- ½ teaspoon almond extract
Frosting:
- 1 ½ cups powdered sugar
- 1 tablespoon unsalted butter, softened
- ½ teaspoon almond extract
- 1–2 tablespoons milk
Instructions
- Prepare the Crust: In a mixing bowl, combine flour and butter until crumbly. Add water and mix until a dough forms. Press into two 12×3-inch strips on an ungreased baking sheet.
- Make the Choux Pastry Layer: In a saucepan, bring water and butter to a boil. Remove from heat and stir in flour until a smooth dough forms. Let cool slightly, then beat in eggs one at a time until the mixture is smooth and glossy. Stir in powdered sugar and almond extract.
- Assemble and Bake: Spread the choux pastry evenly over the crust. Bake at 350°F (175°C) for about 1 hour or until golden brown. Let cool completely.
- Make the Frosting: Whisk together powdered sugar, softened butter, almond extract, and milk until smooth. Adjust consistency as needed.
- Glaze and Serve: Drizzle the frosting over the cooled pastry. Let set before slicing and serving.
Notes
-
- Ensure the butter is cold for the crust to create the perfect flaky texture.
- Let the choux dough cool slightly before adding eggs to prevent them from scrambling.
- The pastry must be fully cooled before frosting to prevent the glaze from melting.
- For added texture, sprinkle sliced almonds over the glaze before it sets.
- Store in an airtight container at room temperature for up to 2 days or refrigerate for up to 5 days.
