A delicious and comforting casserole made with chicken, broccoli, potatoes, and cheese, perfect for a family dinner.
Ingredients
- 2 large russet potatoes, peeled and diced
- 2 cups cooked chicken, shredded
- 2 cups broccoli florets (fresh or frozen)
- 1 cup shredded cheddar cheese
- 1 cup sour cream
- 1/2 cup milk
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon paprika
- 1/2 cup breadcrumbs (optional for topping)
- 2 tablespoons olive oil (optional for drizzling)
Instructions
- Preheat your oven to 375°F (190°C).
- In a large pot, bring salted water to a boil. Add the diced potatoes and cook until tender, about 10-15 minutes. Drain and set aside.
- In a large mixing bowl, combine the cooked chicken, broccoli, cheddar cheese, sour cream, milk, garlic powder, onion powder, salt, black pepper, and paprika. Mix well until all ingredients are evenly coated.
- Gently fold in the cooked potatoes until well combined.
- Transfer the mixture to a greased 9×13 inch baking dish. If using breadcrumbs, sprinkle them evenly over the top. Drizzle with olive oil if desired.
- Bake in the preheated oven for 25-30 minutes, or until the casserole is heated through and the top is golden brown.
- Remove from the oven and let it cool for a few minutes before serving.
Notes
- For a healthier option, substitute Greek yogurt for sour cream and use low-fat cheese.
- Add cooked bacon bits or diced ham for extra flavor and protein.
- You can also use different vegetables like spinach or bell peppers for variety.
