Description

These Berry Oat Crumble Bars are the perfect combination of buttery, crunchy oats and juicy, sweet-tart berries. With a golden oat crumble topping and a luscious berry filling, they make a delicious breakfast, snack, or dessert. Easy to make and packed with flavor, these bars are a must-try for any berry lover!


Ingredients

For the Oatmeal Base & Topping:

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon cinnamon
  • 1 1/2 cups large flake or old-fashioned oats
  • 1 cup white sugar
  • 1/2 cup brown sugar
  • 1 cup butter, melted
  • 1 large egg

For the Berry Layer:

  • 4 1/2 cups mixed berries (strawberries, blueberries, raspberries, or blackberries)
  • 1/2 cup white sugar
  • 2 tablespoons freshly squeezed lemon juice
  • 3 tablespoons cornstarch

Instructions

  • Preheat & Prepare the Crumble: Preheat the oven to 350°F (175°C). Grease or line a baking dish with parchment paper. In a large bowl, mix flour, cinnamon, oats, white sugar, and brown sugar. Stir in the melted butter and egg until a crumbly dough forms.

  • Make the Berry Filling: In another bowl, toss the mixed berries with sugar, lemon juice, and cornstarch. Stir well to coat the berries evenly.

  • Assemble the Bars: Press two-thirds of the oat mixture firmly into the bottom of the prepared baking dish. Spread the berry filling evenly over the base. Sprinkle the remaining oat mixture over the top.

  • Bake & Cool: Bake for 40-45 minutes or until the top is golden brown and the berry layer is bubbling. Allow the bars to cool completely before slicing to help them set.

Notes

  • If using frozen berries, thaw and drain them before using to prevent excess liquid.
  • Adjust the sugar level depending on how sweet or tart your berries are.
  • Let the bars cool completely for cleaner slices.
  • Store in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week.
