Ingredients
For the Oatmeal Base & Topping:
- 2 1/2 cups all-purpose flour
- 1 teaspoon cinnamon
- 1 1/2 cups large flake or old-fashioned oats
- 1 cup white sugar
- 1/2 cup brown sugar
- 1 cup butter, melted
- 1 large egg
For the Berry Layer:
- 4 1/2 cups mixed berries (strawberries, blueberries, raspberries, or blackberries)
- 1/2 cup white sugar
- 2 tablespoons freshly squeezed lemon juice
- 3 tablespoons cornstarch
Instructions
-
Preheat & Prepare the Crumble: Preheat the oven to 350°F (175°C). Grease or line a baking dish with parchment paper. In a large bowl, mix flour, cinnamon, oats, white sugar, and brown sugar. Stir in the melted butter and egg until a crumbly dough forms.
-
Make the Berry Filling: In another bowl, toss the mixed berries with sugar, lemon juice, and cornstarch. Stir well to coat the berries evenly.
-
Assemble the Bars: Press two-thirds of the oat mixture firmly into the bottom of the prepared baking dish. Spread the berry filling evenly over the base. Sprinkle the remaining oat mixture over the top.
-
Bake & Cool: Bake for 40-45 minutes or until the top is golden brown and the berry layer is bubbling. Allow the bars to cool completely before slicing to help them set.
Notes
- If using frozen berries, thaw and drain them before using to prevent excess liquid.
- Adjust the sugar level depending on how sweet or tart your berries are.
- Let the bars cool completely for cleaner slices.
- Store in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week.
