- 1 tsp dried oregano
- Salt and pepper, to taste
- Optional: 1 cup shredded cheddar cheese for topping
Instructions
-
Sauté the Aromatics
- Heat olive oil in a large skillet over medium heat.
- Add diced onion and bell pepper; cook for 3-4 minutes until softened.
- Stir in minced garlic and cook for 30 seconds until fragrant.
-
Brown the Beef
- Add ground beef to the skillet and cook until browned, breaking it up as it cooks.
- Drain excess fat if needed.
-
Toast the Rice & Add Seasonings
- Stir in rice, paprika, oregano, salt, and pepper.
- Cook for 1-2 minutes to allow the rice to absorb flavors.
-
Simmer to Perfection
- Pour in beef broth and diced tomatoes with their juices.
- Bring to a boil, then reduce heat to low. Cover and simmer for 18-20 minutes until rice is tender.
-
Add Cheese & Serve
- If using, sprinkle shredded cheddar cheese over the top.
- Cover and let sit for a few minutes until the cheese melts.
- Fluff the rice with a fork and serve hot.
Notes
-
- For extra spice, add a pinch of red pepper flakes or cayenne.
- Use brown rice for a healthier option, but increase the cooking time by 15 minutes.
- Swap the beef for ground turkey or chicken for a lighter version.
- Store leftovers in an airtight container in the fridge for up to 3 days. Reheat on the stovetop with a splash of broth to keep it moist.
