Description

Ingredients

  • 1 lb lean ground beef
  • 1 cup long-grain white rice
  • 1 medium onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 2 cups beef broth
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp dried oregano
  • Salt and pepper, to taste
  • Optional: 1 cup shredded cheddar cheese for topping

Instructions

  • Sauté the Aromatics

    • Heat olive oil in a large skillet over medium heat.
    • Add diced onion and bell pepper; cook for 3-4 minutes until softened.
    • Stir in minced garlic and cook for 30 seconds until fragrant.
  • Brown the Beef

    • Add ground beef to the skillet and cook until browned, breaking it up as it cooks.
    • Drain excess fat if needed.
  • Toast the Rice & Add Seasonings

    • Stir in rice, paprika, oregano, salt, and pepper.
    • Cook for 1-2 minutes to allow the rice to absorb flavors.
  • Simmer to Perfection

    • Pour in beef broth and diced tomatoes with their juices.
    • Bring to a boil, then reduce heat to low. Cover and simmer for 18-20 minutes until rice is tender.
  • Add Cheese & Serve

    • If using, sprinkle shredded cheddar cheese over the top.
    • Cover and let sit for a few minutes until the cheese melts.
    • Fluff the rice with a fork and serve hot.

Notes

    • For extra spice, add a pinch of red pepper flakes or cayenne.
    • Use brown rice for a healthier option, but increase the cooking time by 15 minutes.
    • Swap the beef for ground turkey or chicken for a lighter version.
    • Store leftovers in an airtight container in the fridge for up to 3 days. Reheat on the stovetop with a splash of broth to keep it moist.
