Description

This Bruschetta-Topped Italian Grilled Chicken is the perfect fusion of juicy, seasoned chicken and a vibrant, fresh tomato topping. Grilled to perfection and topped with a garlic-infused bruschetta mix, this dish is light, flavorful, and packed with classic Italian taste. A drizzle of balsamic glaze ties it all together, making it an elegant yet simple meal for any occasion.

Ingredients

  • Boneless, skinless chicken breasts (4, 6 ounces each)
  • Italian seasoning (2 teaspoons)
  • Kosher salt (1 teaspoon)
  • Onion powder (1 teaspoon)
  • Garlic powder (1 teaspoon)
  • Ground black pepper (1 teaspoon)
  • Olive oil (1-2 tablespoons)

For the Bruschetta Topping:

  • Ripe tomatoes (3-4 medium, about 1 lb), cored, seeded, and diced
  • Kosher salt (1 teaspoon)
  • Garlic cloves (2), minced
  • Extra virgin olive oil (1 tablespoon)
  • Balsamic vinegar (2 teaspoons)
  • Fresh basil leaves (2 tablespoons), thinly sliced
  • Ground black pepper, to taste
  • Balsamic glaze, to taste (optional)

Instructions

  • Prepare the Chicken: Pat the chicken dry and season with Italian seasoning, salt, onion powder, garlic powder, and black pepper. Drizzle with olive oil to coat evenly.
  • Grill the Chicken: Heat a grill or grill pan over medium-high heat. Cook the chicken for 5-6 minutes per side, until it reaches an internal temperature of 165°F (75°C). Let it rest for 5 minutes.
  • Make the Bruschetta Topping: In a bowl, combine the diced tomatoes, salt, minced garlic, extra virgin olive oil, balsamic vinegar, and basil. Stir gently and season with ground black pepper to taste.
  • Assemble & Serve: Spoon the bruschetta topping over the grilled chicken and drizzle with balsamic glaze if desired. Serve immediately.

Notes

  • For the best flavor, use fresh, ripe tomatoes and high-quality balsamic vinegar.
  • If grilling is not an option, the chicken can be pan-seared or baked at 400°F for 20 minutes.
  • Serve with garlic bread, roasted vegetables, or a crisp side salad for a complete meal.
  • Leftovers can be stored in the refrigerator for up to 3 days.
