Creamy Slow Cooker Butter Chicken is an effortless family meal that combines tender chicken thighs with a rich, spiced sauce made in a slow cooker.


Ingredients

  • 1 ½ pounds boneless, skinless chicken thighs
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon vegetable oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon garam masala
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon turmeric
  • 1 can (15 ounces) tomato sauce
  • 1 cup coconut milk
  • 4 tablespoons unsalted butter
  • 1 tablespoon lemon juice
  • Fresh cilantro, for garnish
  • Cooked rice or naan, for serving

Instructions

  1. Season the chicken thighs with salt and pepper. In a skillet over medium heat, add vegetable oil and brown the chicken on both sides for about 5 minutes. Remove from heat and set aside.
  2. In the slow cooker, combine the chopped onion, garlic, ginger, garam masala, cumin, coriander, and turmeric. Stir to combine.
  3. Add the browned chicken thighs on top of the spice mixture. Pour the tomato sauce and coconut milk over the chicken.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is tender and cooked through.
  5. Once cooked, shred the chicken in the slow cooker using two forks. Stir in the butter and lemon juice until melted and well combined.
  6. Serve hot, garnished with fresh cilantro, alongside cooked rice or naan.

Notes

  • For a spicier version, add 1-2 teaspoons of red pepper flakes or a diced jalapeño to the slow cooker.
  • Substitute chicken thighs with chicken breasts for a leaner option, but be careful not to overcook them as they can dry out.
