Creamy Slow Cooker Butter Chicken is an effortless family meal that combines tender chicken thighs with a rich, spiced sauce made in a slow cooker.
Ingredients
- 1 ½ pounds boneless, skinless chicken thighs
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 tablespoon vegetable oil
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 tablespoon garam masala
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon turmeric
- 1 can (15 ounces) tomato sauce
- 1 cup coconut milk
- 4 tablespoons unsalted butter
- 1 tablespoon lemon juice
- Fresh cilantro, for garnish
- Cooked rice or naan, for serving
Instructions
- Season the chicken thighs with salt and pepper. In a skillet over medium heat, add vegetable oil and brown the chicken on both sides for about 5 minutes. Remove from heat and set aside.
- In the slow cooker, combine the chopped onion, garlic, ginger, garam masala, cumin, coriander, and turmeric. Stir to combine.
- Add the browned chicken thighs on top of the spice mixture. Pour the tomato sauce and coconut milk over the chicken.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is tender and cooked through.
- Once cooked, shred the chicken in the slow cooker using two forks. Stir in the butter and lemon juice until melted and well combined.
- Serve hot, garnished with fresh cilantro, alongside cooked rice or naan.
Notes
- For a spicier version, add 1-2 teaspoons of red pepper flakes or a diced jalapeño to the slow cooker.
- Substitute chicken thighs with chicken breasts for a leaner option, but be careful not to overcook them as they can dry out.
