Description

This Mango Chicken Stir-Fry is a sweet and savory sensation that comes together in just 30 minutes! Juicy mango chunks and tender chicken are stir-fried with colorful veggies in a light, tangy sauce—perfect for a fresh, tropical twist on your usual dinner routine.


Ingredients

  • 1 lb boneless, skinless chicken breast or thighs, cut into thin strips
  • 1 tablespoon oil (vegetable or sesame)
  • 1 red bell pepper, sliced
  • 1 cup snap peas or green beans
  • 1 ripe mango, peeled and cut into chunks
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar or lime juice
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon cornstarch mixed with 1 tablespoon water (optional, for thickening)
  • Salt and pepper to taste
  • Cooked rice or noodles, for serving
  • Chopped cilantro or green onions, for garnish

Instructions

  • Heat oil in a large skillet or wok over medium-high heat.
  • Add chicken strips and cook for 5–6 minutes until browned and cooked through. Remove and set aside.
  • In the same skillet, add garlic, ginger, and vegetables. Stir-fry for 3–4 minutes until tender-crisp.
  • Return the chicken to the pan. Add soy sauce, rice vinegar, honey, and stir to combine.
  • Add mango chunks and cook for another 2 minutes, just until warmed through.
  • If desired, stir in cornstarch slurry to slightly thicken the sauce.
  • Season with salt and pepper to taste.
  • Serve over rice or noodles, and garnish with fresh cilantro or green onions
