Description
This Mango Chicken Stir-Fry is a sweet and savory sensation that comes together in just 30 minutes! Juicy mango chunks and tender chicken are stir-fried with colorful veggies in a light, tangy sauce—perfect for a fresh, tropical twist on your usual dinner routine.
Ingredients
- 1 lb boneless, skinless chicken breast or thighs, cut into thin strips
- 1 tablespoon oil (vegetable or sesame)
- 1 red bell pepper, sliced
- 1 cup snap peas or green beans
- 1 ripe mango, peeled and cut into chunks
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar or lime juice
- 1 tablespoon honey or maple syrup
- 1 teaspoon cornstarch mixed with 1 tablespoon water (optional, for thickening)
- Salt and pepper to taste
- Cooked rice or noodles, for serving
- Chopped cilantro or green onions, for garnish
Instructions
- Heat oil in a large skillet or wok over medium-high heat.
- Add chicken strips and cook for 5–6 minutes until browned and cooked through. Remove and set aside.
- In the same skillet, add garlic, ginger, and vegetables. Stir-fry for 3–4 minutes until tender-crisp.
- Return the chicken to the pan. Add soy sauce, rice vinegar, honey, and stir to combine.
- Add mango chunks and cook for another 2 minutes, just until warmed through.
- If desired, stir in cornstarch slurry to slightly thicken the sauce.
- Season with salt and pepper to taste.
- Serve over rice or noodles, and garnish with fresh cilantro or green onions

- Use firm, just-ripe mangoes to keep them from getting mushy.
- Swap in pineapple for a fun variation.
