These Mango Oatmeal Crumble Bars are fruity, chewy, and bursting with tropical flavor! Made with juicy mango filling sandwiched between buttery oat layers, these bars are perfect as a snack, breakfast treat, or light dessert. They’re easy to make and even easier to love!
Ingredients

For the Crust and Crumble:
- 1 1/2 cups rolled oats
- 1 1/4 cups all-purpose flour
- 1/2 cup brown sugar
- 1/4 teaspoon salt
- 1/2 teaspoon cinnamon (optional)
- 1/2 cup unsalted butter, melted
- 1 teaspoon vanilla extract

For the Mango Filling:
- 2 cups diced ripe mango (fresh or thawed from frozen)
- 2 tablespoons granulated sugar
- 1 tablespoon lemon juice
- 2 teaspoons cornstarch
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper.
- In a large bowl, mix oats, flour, brown sugar, salt, and cinnamon. Add melted butter and vanilla. Stir until crumbly.
- Press about 2/3 of the mixture into the bottom of the prepared pan to form the crust.
- In another bowl, mix mangoes, sugar, lemon juice, and cornstarch. Spread this filling evenly over the crust.
- Sprinkle the remaining oat mixture on top as the crumble layer.
- Bake for 30–35 minutes, or until the top is golden and the mango filling is bubbly.
- Let cool completely before slicing into bars.
Notes
- Chill the bars before slicing for cleaner cuts.
- Add shredded coconut to the crust for a tropical twist.
- These bars can be stored in the fridge for up to 5 days.
