Ingredients

  • 1 lb boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
  • 2 tablespoons oil (vegetable or sesame oil)
  • 1 tablespoon fresh ginger, grated
  • 3 garlic cloves, minced
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce (optional for depth)
  • 1 tablespoon rice vinegar or lemon juice
  • 12 teaspoons chili flakes or sriracha (adjust to taste)
  • 1 tablespoon honey or brown sugar
  • Salt and pepper to taste
  • Green onions, chopped (for garnish)
  • Cooked rice, for serving

Instructions

  • Heat oil in a large skillet over medium-high heat.
  • Add the chicken pieces and sear until lightly browned and cooked through, about 6–8 minutes.
  • Push the chicken to one side of the pan. Add garlic and ginger, sauté for 1 minute until fragrant.
  • Stir in soy sauce, oyster sauce (if using), vinegar, chili flakes, and honey. Mix well to coat the chicken evenly.
  • Let the sauce simmer for 2–3 minutes until it slightly thickens.
  • Taste and adjust seasoning with salt, pepper, or more heat as desired.
