Ingredients
- 1 lb ground turkey
- 2 medium sweet potatoes, peeled and diced
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 zucchini, diced
- 1 can (14 oz) diced tomatoes
- 1/2 cup shredded cheese (cheddar or mozzarella, optional)
- 1 tablespoon olive oil
- 1 teaspoon paprika
- 1/2 teaspoon cumin
- 1/2 teaspoon dried oregano
- Salt and pepper to taste
- Fresh parsley or cilantro for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- Heat olive oil in a large skillet over medium heat. Add onions and garlic, sauté until fragrant.
- Add ground turkey and cook until browned, breaking it up with a spoon.
- Stir in bell pepper, zucchini, paprika, cumin, oregano, salt, and pepper. Cook for 5–6 minutes.
- Add the diced tomatoes (with juices) and let simmer for 2–3 minutes.
- In a lightly greased baking dish, layer half the diced sweet potatoes.
- Spoon the turkey mixture over the sweet potatoes, then top with the remaining sweet potatoes.
- Cover with foil and bake for 30 minutes. Remove foil, sprinkle cheese on top (if using), and bake uncovered for another 10–15 minutes, until sweet potatoes are tender and cheese is bubbly.
- Garnish with chopped parsley or cilantro and serve warm.
