Ingredients
- 2 cups sweet potatoes, peeled and diced
- 1 pound ground turkey
- 1 cup onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup chicken broth
- 1 cup frozen peas and carrots
- 1 tablespoon olive oil
- 1/2 cup shredded cheddar cheese (optional)
- Fresh parsley for garnish (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until the onion is translucent, about 5 minutes.
- Add the ground turkey to the skillet, breaking it apart with a spoon. Cook until browned and no longer pink, about 7-10 minutes.
- Stir in the diced sweet potatoes, cumin, paprika, salt, and black pepper. Cook for an additional 5 minutes, stirring occasionally.
- Pour in the chicken broth and bring the mixture to a simmer. Cover and let it cook for about 15 minutes, or until the sweet potatoes are tender.
- Stir in the frozen peas and carrots, mixing well. If using, sprinkle the shredded cheddar cheese on top.
- Transfer the mixture to a greased 9×13-inch baking dish. Bake in the preheated oven for 20-25 minutes, or until heated through and the cheese is melted.
- Remove from the oven and let it cool for a few minutes. Garnish with fresh parsley if desired before serving.
Notes
- For added flavor, consider mixing in some chopped bell peppers or spinach when sautéing the onions and garlic.
- To make it a one-pan meal, you can add other vegetables like zucchini or broccoli to the skillet along with the sweet potatoes.
