Description

This Grilled Chicken Shawarma brings the authentic flavors of Middle Eastern street food to your kitchen. Juicy chicken thighs are marinated in a blend of aromatic spices, then grilled to perfection, offering a delightful combination of smoky, spicy, and tangy tastes

Ingredients

  • 2 pounds boneless, skinless chicken thighs
  • 3 cloves garlic, minced
  • Juice of 1 lemon
  • 1/4 cup plain Greek yogurt
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon ground paprika
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon cayenne pepper (optional, for heat)
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper

Instructions

  • Prepare the Marinade: In a large bowl, combine minced garlic, lemon juice, Greek yogurt, olive oil, cumin, coriander, paprika, turmeric, cinnamon, cayenne pepper (if using), salt, and black pepper. Mix until a smooth marinade forms.

  • Marinate the Chicken: Add the chicken thighs to the marinade, ensuring each piece is thoroughly coated. Cover the bowl and refrigerate for at least 2 hours, or up to 8 hours for deeper flavor.

  • Preheat the Grill: Heat an outdoor grill or grill pan over medium-high heat. Lightly oil the grates to prevent sticking.

  • Grill the Chicken: Remove the chicken from the marinade, allowing excess to drip off. Place the thighs on the grill and cook for 6-8 minutes per side, or until the internal temperature reaches 165°F (74°C) and the exterior is nicely charred.

  • Rest and Serve: Transfer the grilled chicken to a cutting board and let it rest for 5 minutes. Slice into strips and serve warm.

Notes

  • Serving Suggestions: Serve the grilled chicken shawarma in warm pita bread with toppings like lettuce, tomatoes, red onions, and a drizzle of garlic yogurt sauce. Alternatively, pair it with a fresh salad or seasoned rice.

  • Storage: Leftover chicken can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently before serving.
