Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 cups shredded sharp cheddar cheese
  • 1 sleeve (about 30) buttery crackers (like Ritz), crushed
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • 2 eggs, beaten
  • 2 tablespoons milk
  • 2 tablespoons butter, melted
  • Fresh parsley, chopped (for garnish)

Instructions

  • Preheat oven to 400°F (200°C). Lightly grease a baking dish.

  • In a shallow bowl, mix crushed crackers, garlic powder, paprika, salt, and black pepper.

  • In another bowl, whisk together eggs and milk.

  • Dip each chicken breast first in the egg mixture, then press into the cracker mixture to coat both sides.

  • Place coated chicken breasts in the prepared baking dish. Sprinkle shredded cheddar cheese evenly over the top of each piece.
