Description

Moist, tender, and loaded with bold flavors, this Flavor-packed Garlic Parmesan Chicken Meatloaf takes a classic comfort food to the next level. Juicy ground chicken is blended with garlic, Parmesan, and savory herbs—baked to perfection and topped with extra cheesy goodness. A delicious twist on traditional meatloaf

Ingredients

  • 1 lb (450g) ground chicken
  • ½ cup breadcrumbs
  • ½ cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 large egg
  • ¼ cup milk
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Italian seasoning
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup shredded mozzarella cheese (for topping)
  • 2 tablespoons chopped parsley (for garnish)

Instructions

  • Preheat oven to 375°F (190°C). Lightly grease a loaf pan.

  • In a large mixing bowl, combine ground chicken, breadcrumbs, Parmesan cheese, minced garlic, egg, milk, Worcestershire sauce, Italian seasoning, onion powder, salt, and black pepper. Mix until well combined.

  • Transfer the chicken mixture to the prepared loaf pan, shaping it into a loaf.

  • Bake for 35-40 minutes, or until the meatloaf is cooked through (internal temperature reaches 165°F).

  • Remove from the oven, sprinkle shredded mozzarella cheese over the top, and return to the oven for 5 more minutes until the cheese is melted.

  • Let the meatloaf rest for 5 minutes, then garnish with chopped parsley before slicing and serving.

Notes

  • Protein Swap: Feel free to substitute ground turkey or beef if preferred.
  • Cheese Boost: Mix a little extra Parmesan or sharp cheddar into the meat mixture for added cheesiness.
  • Serving Suggestions: Delicious with mashed potatoes, roasted veggies, or a crisp side salad.
  • Storage: Store leftovers in an airtight container in the fridge for up to 3 days. It also freezes well for meal prep!
