Description

Bursting with bright citrus and garlic flavors, this Mojo Chicken is a Cuban-inspired dish that’s juicy, zesty, and packed with deliciousness! Marinated in a bold mix of orange, lime, and savory spices, then grilled or pan-seared to perfection, this recipe is perfect for weeknight dinners or weekend cookouts. Serve it with rice, black beans, or a fresh salad for a tropical twist!

Ingredients

  • 4 boneless, skinless chicken breasts or thighs
  • 1/4 cup olive oil
  • 1/4 cup fresh orange juice
  • 2 tablespoons fresh lime juice
  • 4 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 tablespoon chopped fresh cilantro (for garnish)

Instructions

  • Make the Marinade: In a bowl, whisk together olive oil, orange juice, lime juice, garlic, cumin, oregano, salt, black pepper, smoked paprika, and red pepper flakes (if using).

  • Marinate the Chicken: Place the chicken in a zip-top bag or shallow dish. Pour the marinade over the chicken, ensuring it’s well coated. Marinate in the refrigerator for at least 2 hours or overnight for deeper flavor.

  • Preheat & Cook: Heat a grill or pan over medium-high heat. Lightly oil the surface, then cook the chicken for about 6-7 minutes per side until golden brown and cooked through (internal temperature of 165°F/75°C).

  • Rest & Serve: Remove from heat and let the chicken rest for 5 minutes. Garnish with fresh cilantro and serve with your favorite sides.

Notes

  • For extra tenderness, marinate overnight for maximum flavor.
  • No grill? Use a cast-iron pan or bake at 400°F (200°C) for 20 minutes.
  • Great for meal prep! Store leftovers in an airtight container for up to 3 days.
