Ingredients

  • 8 oz rice noodles or spaghetti
  • 1 tablespoon vegetable oil
  • 2 cloves garlic, minced
  • 1 red bell pepper, thinly sliced
  • 1 cup shredded carrots
  • 1/2 cup chopped green onions
  • 1/4 cup chopped peanuts (for garnish)
  • 1/4 cup fresh cilantro, chopped
  • Lime wedges (for serving)

Instructions

  • Cook the Noodles: Boil noodles according to package instructions, drain, and set aside.

  • Make the Peanut Sauce: In a bowl, whisk together peanut butter, soy sauce, rice vinegar, honey, sesame oil, sriracha, and warm water until smooth.
