Ingredients

  • 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
  • 2 cups fresh green beans, trimmed
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • ¼ cup low-sodium soy sauce
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • ½ teaspoon red pepper flakes (optional)
  • 1 teaspoon cornstarch mixed with 2 tablespoons water (slurry)
  • 1 tablespoon sesame seeds (for garnish)
  • 2 green onions, sliced (for garnish)

Instructions

  • Prepare the Chicken: Pat dry the chicken pieces and season lightly with salt and pepper.

  • Sauté the Chicken: Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat. Add the chicken and cook for 5-6 minutes until golden brown. Remove and set aside.

  • Cook the Green Beans: Add the remaining olive oil to the same pan. Stir-fry the green beans for 3-4 minutes until slightly tender but still crisp.

  • Make the Sauce: Add garlic and ginger, sautéing for 30 seconds until fragrant. Stir in soy sauce, honey, rice vinegar, sesame oil, and red pepper flakes.

  • Thicken & Combine: Pour in the cornstarch slurry and stir until the sauce thickens. Add the cooked chicken back to the pan and toss everything together.

  • Garnish & Serve: Sprinkle with sesame seeds and green onions. Serve hot over rice or quinoa.
