The juicy salmon is coated in a rich, tangy glaze made with pineapple, soy sauce, and honey, then baked to perfection. Whether for a weeknight dinner or a special gathering, this dish is guaranteed to impress!

Ingredients

  • 4 salmon fillets
  • 1 cup fresh pineapple chunks (or canned, drained)
  • ¼ cup soy sauce
  • ¼ cup honey
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lime juice
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, grated
  • ½ teaspoon red pepper flakes (optional for spice)
  • Salt and black pepper to taste
  • 2 green onions, chopped (for garnish)
  • 1 tablespoon sesame seeds (optional)

Instructions

    • Preheat the oven to 375°F (190°C). Line a baking dish with parchment paper.

    • Prepare the marinade: In a bowl, mix soy sauce, honey, olive oil, lime juice, garlic, ginger, and red pepper flakes.

    • Marinate the salmon: Place salmon fillets in the baking dish. Pour the marinade over them, ensuring even coating. Let sit for 10 minutes.

    • Add pineapple: Scatter pineapple chunks around and on top of the salmon.

    • Bake: Place the dish in the oven and bake for 18-20 minutes, or until salmon is flaky and cooked through.

    • Garnish: Sprinkle chopped green onions and sesame seeds before serving.

    • Serve: Enjoy hot with steamed rice or roasted veggies!

Notes

  • For extra caramelization, broil the salmon for 2-3 minutes after baking.
  • Swap honey with maple syrup for a different sweetness.
  • Use fresh pineapple for the best flavor, but canned works too!
