Ingredients
- 1 lb beef stew meat, cut into bite-sized pieces
- 1 tablespoon olive oil
- 1 small onion, diced
- 3 garlic cloves, minced
- 8 cups beef broth
- 2 carrots, sliced
- 2 celery stalks, chopped
- 1 tablespoon soy sauce
- 1 teaspoon Worcestershire sauce
- 1 teaspoon dried thyme
- ½ teaspoon black pepper
- ½ teaspoon salt (adjust to taste)
- 8 oz egg noodles
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
-
Heat the olive oil in a large pot over medium-high heat. Add the beef and sear until browned on all sides. Remove and set aside.
-
Sauté the onion and garlic in the same pot until fragrant and translucent, about 2 minutes.
-
Pour in the beef broth and add the browned beef, carrots, celery, soy sauce, Worcestershire sauce, thyme, salt, and black pepper. Bring to a boil.
-
Reduce heat and simmer for 30 minutes, or until the beef is tender.
-
Add the egg noodles and cook for another 8-10 minutes, until the noodles are soft.
-
Taste and adjust seasoning if needed, then garnish with fresh parsley before serving.
Notes
- Make it richer: Add a splash of red wine or a beef bouillon cube for a deeper flavor.
- Vegetable variations: Mushrooms, bell peppers, or green beans can be added for extra nutrition.
- Noodle choices: Swap egg noodles for rice noodles, udon, or even pasta shells.
- Storage: Store leftovers in an airtight container in the fridge for up to 3 days. Reheat gently and add extra broth if needed.
