Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 (16 oz) package refrigerated tortellini (cheese or meat-filled)
  • 1 (10.5 oz) can cream of chicken soup
  • 1 (14.5 oz) can chicken broth
  • 1 cup heavy cream
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt (adjust to taste)
  • ½ teaspoon black pepper
  • 1 cup grated Parmesan cheese
  • Fresh parsley for garnish (optional)

Instructions

  •
  • Add Ingredients to CrockPot: Place the chicken breasts in the bottom of the CrockPot. Add the cream of chicken soup, chicken broth, heavy cream, garlic powder, onion powder, Italian seasoning, salt, and pepper. Stir to combine.

  • Cook: Cover and cook on low for 6–7 hours, or on high for 3–4 hours, until the chicken is fully cooked and shreds easily.

  • Shred Chicken: Once the chicken is cooked, shred it using two forks and stir it back into the sauce.

  • Add Tortellini: Stir in the tortellini and cook on high for an additional 30–45 minutes, until the tortellini is tender and cooked through.

  • Finish and Serve: Stir in the Parmesan cheese until melted and creamy. Garnish with fresh parsley, if desired, and serve warm!

Notes

  • If you prefer a thicker sauce, you can add a bit of cream cheese or use less chicken broth.
  • Feel free to add vegetables like spinach or peas for extra nutrition.
  • For a lighter version, you can substitute the heavy cream with half-and-half or milk.
  • Leftovers can be stored in an airtight container in the fridge for up to 3 days.
