Ingredients

  • 4 bone-in, skin-on chicken thighs
  • 4 medium potatoes, cut into wedges
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • ½ teaspoon salt (adjust to taste)
  • ½ teaspoon black pepper
  • 1 teaspoon lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon fresh thyme (or ½ teaspoon dried thyme)
  • ½ teaspoon red pepper flakes (optional)

Instructions

  • Preheat Oven: Preheat your oven to 400°F (200°C). Lightly grease a baking dish or line it with parchment paper.

  • Prepare Ingredients: In a large bowl, toss the potato wedges with 1.5 tablespoons of olive oil, half the seasonings (garlic powder, onion powder, paprika, oregano, salt, and pepper), and minced garlic.
